With the ability to obtain ingredients from all over the world comes the responsibility to ensure that the ingredients are produced in a safe and sustainable manner. Protecting the environment and providing for individual farmers results in a superior product. I choose all of my ingredients with this in mind. I invite you to learn more about where my ingredients come from.
Because of its long history of organic farming practices, I purchase cream from the Straus Family Creamery.
I purchase fair trade, organic evaporated cane juice because it is healthier for the environment and for the individuals involved in its processing.
The fruit, nuts, herbs and honey that I use are all organic and/or local to California.
Finally, the chocolate that I use is organic and fair trade certified. Cocoa trees do not grow in the United States. In order to remain competitive in the world market, many cocoa farmers have resorted to child and slave labor in addition to conventional (non-organic) farming practices. These unfair labor practices and environmental abuse are supported by some of the largest sellers of chocolate in the United States. Fair trade certification in the chocolate industry ensures that no child or slave labor was used in processing the cocoa.
